The Dorchester Hotel set out to create the best sushi restaurant in London and turned to Itai Komuten, a company renowned for designing and building high-end sushi restaurants in Tokyo. The interior features a 6.4-meter sushi counter made from Kiso hinoki cypress, traditional yukimi-shoji, Japanese for snow-viewing screens, and juraku-style plaster walls, all materials sourced directly from Japan. Skilled Japanese carpenters and plasterers were brought to London to carry out the construction, making this the only truly authentic Japanese style interior in the UK. Our firm provided architectural consulting, interpretation, and detailed on-site design services. Since opening, the restaurant has been awarded a Michelin star and recognised by industry publications as the top Japanese restaurant in the UK.
